Sure there's millions of takes on toads in holes (bread! hash browns! bell peppers!) and plenty of egg casseroles with ham and cheese. But what about when you want something different. Something savory and light. Eggy and cheesy but also served in pie slices? Is that just me? I doubt it.
I have to warn you. There's no going back. Once you have this pesto, all other pesto will be ruined. Yes, you read that right. This is the pesto to end all pesto.
Is it great to lip grab a bass and snap a picture? It is great to toss a few in the basket, hoping maybe this time we'll catch enough for a fish dinner? It is thrilling when your son catches a fish for the first time, only to have a larger fish jump out of the water to try to grab the fish he's pulling through the surface? Yes. But when I think of fishing I don't think of a taut line. I don't think of a wild reel. I don't think of the dance it requires to succeed.
Tonight I made this soup with Mom for the first time. We talked through her youth. We did math and recollected dates. I corrected the order of the time before they knew one another in my memory.
It was one of the most important things Dad ever said to me. And in moments when I've struggled to meet a challenge, if I harken back to that moment and that success, I succeed again.
My Momma is a damn good cook. She fed us so well all my life. And even though I began my life as a somewhat picky eater - and even though I continue to have a few of those early food quirks heldover - her ability to make things delicious inspired my life in ways I can't fully express.
