Butterscotch Frosting

This is a fantastic frosting for chocolate cake, especially if you serve it with a nice strong cup of coffee. Pay careful attention to the consistency. If it ends up too dry, you can always adjust and add more milk, or even a tablespoon or two of hot water, to reach that perfect spreadable state.

Butterscotch Frosting

Makes: A buncha frosting

Ingredients

  • 1 C brown sugar
  • 3 T shortening
  • 2 T unsalted butter
  • 1/4 tsp salt
  • 1/4 C milk
  • 1 C powdered sugar, sifted

Instruments

  • Small saucepan
  • Stirrin’ spoon
  • Sifter
  • Electric hand mixer

Instructions

  1. Combine the brown sugar, shortening, butter, and salt in a saucepan and bring to a boil. stirring constantly.
  2. Add milk and boil gently for 3 minutes.
  3. Cool completely
  4. In a mixing bowl, combine brown sugar mixture with powdered sugar and beat on medium speed until goog consistency.
  5. You may need to add more softened butter, powdered sugar, or a tablespoon or two of warm water to reach the consistency you want. It should be spreadable, fluffy, not too dry and not runny.
