This is a fantastic frosting for chocolate cake, especially if you serve it with a nice strong cup of coffee. Pay careful attention to the consistency. If it ends up too dry, you can always adjust and add more milk, or even a tablespoon or two of hot water, to reach that perfect spreadable state.
Butterscotch Frosting
Makes: A buncha frosting
Ingredients
- 1 C brown sugar
- 3 T shortening
- 2 T unsalted butter
- 1/4 tsp salt
- 1/4 C milk
- 1 C powdered sugar, sifted
Instruments
- Small saucepan
- Stirrin’ spoon
- Sifter
- Electric hand mixer
Instructions
- Combine the brown sugar, shortening, butter, and salt in a saucepan and bring to a boil. stirring constantly.
- Add milk and boil gently for 3 minutes.
- Cool completely
- In a mixing bowl, combine brown sugar mixture with powdered sugar and beat on medium speed until goog consistency.
- You may need to add more softened butter, powdered sugar, or a tablespoon or two of warm water to reach the consistency you want. It should be spreadable, fluffy, not too dry and not runny.
